COLOUR Black core/garnet rim. NOSE Sweet and savoury notes compete for attention. A concoction of umami notes: roast meat pan-scrapings, dark soy sauce, soppressa salami, char sui pork and five spiced quail. Dried herbs: rosemary/oregano. Ripe plumbs and blackberries to the fore. Notes of potpourri and violets provide lift. Black tea, ground allspice and toasted ajwain seeds provide spice allure. PALATE Lovely mocha, chocolate, espresso flavours. Black jellybean, liquorice, chocolate truffles and rum & raisin. Black forest cake, strudel, crème anglaise. Toasted fennel seeds and fresh tarragon.
